Ain is a true advocate of Indian gastronomy. His motivation is to deliver culinary experiences of the highest quality that truly reflect one of the regions richest natural larders.
Ain began his career washing pots and pans in his hometown of Birmingham in 1988. He then spent several years working in London, most notably, at Benaras as assistant chef for renowned Celebrity chef Atul Kochur. It was working with Atul that helped Ain to prioritise his ‘ingredient led’ cooking approach. “When I cook, I am cooking with my heart and soul. The greatest joy is brought to me when I see that my food is making people happy, that they truly enjoy and appreciate the food.”
Ain in 2003 went on to open his first establishment in Coalville “Elaichi” and subsequently to three successful years, a chain of restaurants, Bayleaf, Shaad, and most recent Moza in Derby. Today as Chef/Director, Ain devotes his energies to creatively evolving and progressing “Viceroy” as a singularly unique establishment, and as an ambassador for Indian food culture across the region.
